Augustines Quince and Mustard Glaze for Ham

This is an easy recipe for your Christmas Ham glaze, using our Augustines of Central Quince Paste.

Augustines Lip-Smacking Quince Glaze Recipe

Cook time: 45mins -1hr

Ingredients: 

  • 2 tsp whole clover

  • 100g of Augustines Quince Paste

  • 2 Tbsp maple syrup

  • 1 Tbsp of brandy

  • 1 tsp sumack (optional)

  • 2 tsp apple cider vinegar

  • 2 tsp wholegrain mustard

Glaze will cover a 4kg cooked half leg or ham.

Method:

  1. Preheat oven to 180° C (160° fan)

  2. Cut through ham rind 8cm from shank. Run thumb underneath to separate from flat. Peel back and remove the rind. With a small knife score fat diagonally (not too deeply) to form a diamond pattern

  3. Place 1 clove in the centre of each diamond. Wrap the shank end in foil.

  4. Melt quince paste with maple syrup, brandy, and vinegar in a small saucepan over medium-low heat, stirring for 5-6 minutes. Remove from heat and stir in mustard and sumack.

  5. Place ham on a wire rack in a roasting pan. Add boiling water to 2cm in a pan. Brush ham with half the glaze.

  6. Bake, basting with remaining glaze every 15 minutes for 45 to 50 minutes or until the glaze changes colour. Serve with extra mustard!
