Augustines Apricot and Whipped Feta Bruschetta with Mint

Augustines Apricot and Whipped Feta Bruschetta with Mint Recipe

Ingredients: 

  • 100g of Feta

  • 150g of Cream Cheese

  • A teaspoon of Lemon Zest

  • A teaspoon of Olive Oil

  • A teaspoon of Apple Cider Vinegar

  • Augustines Sundrop Apricots in Riesling Syrup

  • Fresh Mint

  • Bread of your choice e.g. ciabatta, sourdough (don't use fruit loaf that's just weird)

Method:

  1. For the whipped feta:

    In a food processor combine feta, cream cheese, lemon zest, olive oil and vinegar. Blend to a smooth paste. Set aside.

  2. Drain apricots and slice your bread ready for grilling.

  3. Lightly brush the bread slices with olive oil and grill on the BBQ or a heavy fry pan on your stovetop until the bread is lightly coloured on both sides.

  4. Liberally spread the whipped feta on your grilled bread, top with apricots and freshly chopped mint.

  5. Alternatively, you can try different fruit and herb combos

    E.g: Whipped feta, grapes and rocket, whipped feta, peach and parsley, or even whipped feta, pear and chervil

  6. You're the boss, make it your own.
